Friday, morning we had coffee with the grandparents, and then came the bad stuff. She made biscuits, grits, bacon, and scrambled eggs. I portion sized this but the bad stuff didnt come until later. Around 3 me and my sister were craving mexican. Uh oh! I ate a lot of chips and salsa... it gets worst. I limited myself to 2 fajitas. I went to whole foods and picked up my favorite high protein yogurts...but then found the cake balls and got 2 and some chocolate milk...do i need to continue ...this is why u never have a splurge on your life changing plan especially when you are only on week 2. I have been reminded of this and am very ashamed! I will really be kicking up my game now!
Friday was counted as my day of rest. I woke up Today feeling extremely lazy! I hate skipping a workout! I forced myself to do KenpoX and Abs X since I didnt do Abs on Thursday. I had a handful of slivered almonds to give myself energy before I started. I feel so much better after this workout. For lunch I made homemade chicken whole wheat noodle soup! (Recipe after this blog. ) Yum I have been really craving this and gumbo...so I opted for this! :) It was delicious and I had a jello indulgence cup after. Well I will be eating off of this soup for the next few days. I have work tonight and I will be starting week 3 tomorrow. Core Synergistics! Yea Baby can't wait to see more results my abs are getting a little flatter.
Recipe:
Ingredients
- 2 tablespoons (2 turns around the pan) extra-virgin olive oil
- 2 medium carrots, peeled and chopped
- 1 parsnip, peeled and chopped
- 1 medium onion, chopped
- 2 ribs celery
, chopped
- 2 bay leaves, fresh or dried
- Salt and pepper
- 6 cups good quality chicken stock
- 1 pound (the average weight of 1 package) chicken breast tenders, diced
- 1/2 pound wide egg noodles
- A handful fresh parsley, chopped
- A handful fresh dill, chopped
Directions
Place a large pot over moderate heat and add extra-virgin olive oil. Work close to the stove and add vegetables to the pot as you chop, in the order they are listed.
Add bay leaves and season vegetables with salt and pepper, to taste. Add stock to the pot and raise flame to bring liquid to a boil. Add diced chicken tenderloins, return soup to a boil, and reduce heat back to moderate. Cook chicken 2 minutes and add noodles. Cook soup an additional 6 minutes or until noodles are tender and remove soup from the heat.
Stir in parsley and dill, remove bay leaves and serve. This is a thick soup. Add up to 2 cups of water if you like chicken soup with lots of broth.
